Super Seed Schnitzel

Cooking visual for super seed schnitzel using hemp seed.

Ingredients:

  • 35g Good Country Hemp hemp seed
  • 50g polenta
  • 20g finely grated parmesan
  • 1 egg
  • 1 tbsp water
  • 2 tsp cornflour
  • 2 large chicken breasts, halved
  • 2 tbsp extra virgin olive oil
  • 1 tbsp Good Country Hemp lemon dressing
  • Mash and steamed green beans, to serve

Directions:

  • Combine the hemp seed, polenta and parmesan on a plate
  • Lightly whisk egg, water and cornflour in a shallow bowl
  • Dip chicken pieces in egg, then the seed mixture, pressing to coat.
  • Heat the oil in a large frying pan over medium heat.
  • Cook the chicken, turning for 6-7 minutes until golden and cooked through
  • Transfer toa plate lined with paper towell to absorb excess oil
  • Serve with potato or cauliflower mash & green beans
  • Drizzle with Good Country Hemp’s lemon dressing
