Beetroot & Hemp Dip

INGREDIENTS:

3 medium freshly dug beetroots

3 tblspn Good Country Hemp hemp seed oil

2 tblspn lemon juice

1 tblspn Good Country Hemp hulled hemp seed

2 tspn crushed garlic

½ tspn ground cumin

½ tspn ground coriander

½ tspn paprika

350ml Greek yoghurt

METHOD:

Preheat oven to 180oC

Peel beetroot, dice into 2cm cubes

Toss in 1 tbslpn hemp seed oil

Cook beetroot for 20-30 mins until soft

Cool beetroot

Blend in a processor the beetroot and remaining ingredients until a puree.

Store in fridge.

Serves 12.
