Ingredients:
- 35g Good Country Hemp hemp seed
- 50g polenta
- 20g finely grated parmesan
- 1 egg
- 1 tbsp water
- 2 tsp cornflour
- 2 large chicken breasts, halved
- 2 tbsp extra virgin olive oil
- 1 tbsp Good Country Hemp lemon dressing
- Mash and steamed green beans, to serve
Directions:
- Combine the hemp seed, polenta and parmesan on a plate
- Lightly whisk egg, water and cornflour in a shallow bowl
- Dip chicken pieces in egg, then the seed mixture, pressing to coat.
- Heat the oil in a large frying pan over medium heat.
- Cook the chicken, turning for 6-7 minutes until golden and cooked through
- Transfer toa plate lined with paper towell to absorb excess oil
- Serve with potato or cauliflower mash & green beans
- Drizzle with Good Country Hemp’s lemon dressing
