Frittata with hemp

A tasty, wholesome dish to please!


· 1/4  jap pumpkin, diced

· 2 carrots, thick sliced

· 1 red onion, sliced

· 2 zucchini, diced

· 2 red capsicums, coarsely chopped

· 8 eggs

· 1 cup grated cheese

· hemp seed oil

· hulled hemp seed


· Toss pumpkin and carrot in 1 tblspn of hemp seed oil and roast for 15 mins

· Grease a 20cm square oven proof dish

· Place all vegetables into the dish

· Beat eggs and add grated cheese

· Pour egg and cheese mixture over vegetables

· Sprinkle cheese and hemp seed over the top of the frittata

· Cook in a moderate oven for 30 to 45 mins or until dish looks set.
