Hemp Breakfast Toast

A healthy hemp start to the day.


· 2 slices rye bread, sour dough or hemp bread

· hummus

· 8 cherry tomatoes

· 8 white button mushrooms

· 150g baby spinach leaves

· hulled hemp seeds

· hemp oil

· salt and pepper


· Over a medium heat, add a tablespoon of hemp seed oil to a small frying pan

· Gently fry tomatoes and mushrooms

· Add spinach leaves to frying pan until just wilted

· Toast bread

· Spread toast with generous serve of hummus

· Sprinkle vegetable mix over toast

· Top with a sprinkle of hulled hemp seed and hemp seed oil

· Season with salt and pepper.
